Ingredients

  • 700g pork shoulder or neck, cut into 3 cm cubes
  • 4 tbsp extra-virgin olive oil
  • Juice of 2 lemons
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • ½ tsp ground cumin
  • Salt and freshly ground black pepper
  • To serve: 4 warm pita breads, tzatziki, sliced tomatoes, red onion, fresh parsley

Method

  1. 1

Combine the olive oil, lemon juice, garlic, oregano, paprika, and cumin. Season generously. Add the pork and toss to coat. Marinate for at least 2 hours, or overnight in the fridge.

  2. 2

Thread the pork onto metal skewers, packing the pieces snugly together.

  3. 3

Heat a griddle pan or barbecue to high heat. Cook the skewers for 10–12 minutes, turning every 3 minutes, until charred at the edges and cooked through.

  4. 4

Rest the skewers for 5 minutes.

  5. 5

Warm the pita breads on the grill for 30 seconds each side.

  6. 6

Serve the souvlaki on or alongside the pita with tzatziki, tomatoes, red onion, and a squeeze of lemon.
