Ingredients

  • 2 salmon fillets (approx. 180g each), skin on
  • 2 tbsp capers, roughly chopped
  • Juice of 1 lemon
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper

Method

  1. 1

Pat the salmon dry with kitchen paper. Season both sides generously with salt and pepper.

  2. 2

Heat a griddle or heavy pan over high heat until smoking. Brush with a little oil.

  3. 3

Place salmon skin-side down. Cook for 4 minutes without moving until the skin is crisp.

  4. 4

Flip and cook for a further 2–3 minutes until just cooked through.

  5. 5

While the salmon cooks, whisk together the capers, lemon juice, olive oil, garlic, and herbs to make the sauce.

  6. 6

Rest the salmon for 1 minute, then serve with the caper sauce spooned over.
