Loukoumades
Light, pillowy Greek honey doughnuts fried until golden and drenched in warm honey syrup with cinnamon and walnuts.
Ingredients
- 300g plain flour
- 7g instant yeast (1 sachet)
- 1 tsp sugar
- 1 tsp salt
- 300ml warm water
- Vegetable oil for deep-frying
- For the syrup: 200g honey, 2 tbsp water, 1 tsp ground cinnamon
- To serve: crushed walnuts, extra cinnamon, sesame seeds (optional)
Method
- 1
Combine the flour, yeast, sugar, and salt in a large bowl. Gradually whisk in the warm water until you have a smooth, thick batter. Cover and leave in a warm place for 1 hour until bubbly and doubled.
- 2
Heat vegetable oil in a deep pan to 175 °C. The oil should be at least 8 cm deep.
- 3
Using two wet spoons or a small ice cream scoop, drop spoonfuls of batter into the hot oil. Fry in batches of 6–8 for 3–4 minutes, turning, until deep golden all over.
- 4
Remove with a slotted spoon and drain briefly on kitchen paper.
- 5
Warm the honey with the water and cinnamon in a small pan until runny.
- 6
Pile the loukoumades into a bowl, drizzle generously with the warm honey syrup, and scatter with crushed walnuts and a dusting of cinnamon. Serve immediately.
